Dominica titiwi accra recipe

Equipment

  • saucepan or deep fryer
  • ice cream scoop or measuring cup (I used ¼ cup)
  • Tongs for turning over accra and removing from pan
  • Fork for mixing ingredients

Ingredients
  

  • cups titiwi
  • 2 cups flour
  • cups water
  • ¼ cup onion chopped
  • ¼ cup parsley chopped
  • ¼ cup green onions chopped
  • ¼ cup thyme leaves
  • 2 tbsp hot peppers chopped (you can increase or decreased the quantity based on your preference)
  • 1 tbsp turmeric
  • 1 teaspoon black pepper
  • salt to your liking
  • 1 tbsp garlic powder
  • 1 tbsp baking powder
  • 2 tbsp lime/lemon
  • 3 cups oil

Instructions
 

  • Place titiwi in a bowl and rinse with lemon/lime juice and water then drain titiwi
  • In another bowl, mix flour and water
  • Add all other ingredients and mix
    titiwi ingredients
  • Add titiwi to the mixture to create your titiwi batter
  • Add baking powder last and continue to mix
  • Heat oil in your saucepan or use a deep fryer
  • Using a scoop or measuring cup, take some of the batter and place in hot oil to fry
  • When it turns golden brown, turn it over other side
  • When cooked on both sides, place on a paper towel to cool and drain the oil
  • Enjoy with a special sauce or plain
