Plantain pies Christmas tree

Equipment

  • Brush
  • cupcake baking pans
  • cupcake liners
  • Pizza Cutter
  • Deep frying pan
  • cutting board

Ingredients
  

  • 15 plantains sliced diagonally
  • 4 cups vegetable oil
  • 1 stick butter
  • ¾ cups sugar
  • 1 tbsp cinnamon
  • 4 packages pie dough crust

Instructions
 

  • Place sliced plantains into hot oil to fry. Don't over fry like I did this time around.
  • Place fry plantains next to a cutting board
  • In a bowl mix melted butter, cinnamon, and sugar
  • Cut pie crust dough into 2 inch sections
  • Add butter/cinnamon/sugar mixture to dough with a brush
  • Add plantains to dough on half of the dough
  • Cover the plantains with the other half of the dough
  • Roll plantains and dough and place them in cupcake liner
  • Complete this process until you have 24
  • Use the rest of the butter mixture and generously brush over plantain
  • Tent cover so it doesn't burn and place in the oven at 300°
  • Uncover for a few minutes and let it brown
  • Remove from the oven and create your tree

Notes

For the lights, I used holiday collection Skittles from Walmart
Don't fry your plantains too much. This time around I overfried them
Use overripe plantains as they will be sweeter
