They are related to trout and salmon family but remain very small between 2-5 inches . Titiwi follows the luna calendar, appearing near shore at certain times of the year. This tiny flavorless fish is often celebrated in Dominica and earned a reputation of being one of the principal ingredients in accra otherwise know in other Caribbean island, fritters..
In Dominica, although the most popular ingredient in accra is saltfish or codfish, however, titiwi has taken its rightful place on the culinary experiences, synonymous with authentic Dominican cuisine. Since the harvesting of titiwi happens at certain times of the year, codfish has become much more prevalent in accra. However, I’m my opinion it’s limited availability is what makes titiwi extra special. Some villages in Dominica, like Layou, have celebrated titiwi with its festival, where it’s prepared and eaten in different ways, accra still remains my favorite way to eat titiwi.
Whenever my mom knew that the local fishermen in Thibaud had titiwi for sale, she’d make sure to purchase a few pounds as we would use it to make lots of delicious accras. I watched her make accra, not using measurements, yet every time she had the same consistency with the expected results, and her accras were always so delicious. I’m not in Dominica now but have found titiwi at my local Asian supermarket. It’s not as fresh as the ones in Dominica, but it creates a similar experience that’s nostalgic for my childhood. In this recipe, I tried to duplicate my mother’s titiwi accra. Hopefully, you’ll enjoy it just as much as my family and I did.
I served my titiwi accra in straw boats, with spicy guacamole dip in a coconut shell bowl.
Dominica titiwi accra recipe
Equipment
- saucepan or deep fryer
- ice cream scoop or measuring cup (I used ¼ cup)
- Tongs for turning over accra and removing from pan
- Fork for mixing ingredients
Ingredients
- 2½ cups titiwi
- 2 cups flour
- 2½ cups water
- ¼ cup onion chopped
- ¼ cup parsley chopped
- ¼ cup green onions chopped
- ¼ cup thyme leaves
- 2 tbsp hot peppers chopped (you can increase or decreased the quantity based on your preference)
- 1 tbsp turmeric
- 1 teaspoon black pepper
- salt to your liking
- 1 tbsp garlic powder
- 1 tbsp baking powder
- 2 tbsp lime/lemon
- 3 cups oil
Instructions
- Place titiwi in a bowl and rinse with lemon/lime juice and water then drain titiwi
- In another bowl, mix flour and water
- Add all other ingredients and mix
- Add titiwi to the mixture to create your titiwi batter
- Add baking powder last and continue to mix
- Heat oil in your saucepan or use a deep fryer
- Using a scoop or measuring cup, take some of the batter and place in hot oil to fry
- When it turns golden brown, turn it over other side
- When cooked on both sides, place on a paper towel to cool and drain the oil
- Enjoy with a special sauce or plain
Spicy guacamole
Equipment
- bowl
Ingredients
- 3 avocados haas or similar
- 1 tbsp lime or lemon juice
- ¼ cup red onions chopped
- ¼ cup cilantro chopped
- 1 cup tomatoes chopped
- salt to your liking
- 1 teaspoon black pepper
- 1 teaspoon chilli pepper
- 1 teaspoon pepper sauce adjust to your tolerance level
- 1 teaspoon pepper flakes for garnish (you can also use fresh chopped peppers)
Instructions
- Cut avocados in half
- Remove the seeds
- Place avocado in a bowl, and mash with a fork
- Fold in other ingredients except pepper flakes
- Continue to mix with a fork until you have the right consistency (not to runny, but with some small chunks of avocado)
- Transfer to a serving bowl
- Add pepper flakes as a garnish
- Enjoy!
